Jungle Jim’s Spa Cuisine Class

We partnered with The Cooking School of Jungle Jim’s International Market to teach guests to cook a delicious menu direct from Red Mountain Spa – yummy, healthy and diabetic friendly too!  The Chicken Piccata recipe below:

Spa Chicken & Tofu Piccata with Lemon, Basil & Caper Sauce – yield 6 Chicken Breasts & Tofu with 1.5 cup of sauce

Ingredients:
Boneless, Skinless, Chicken Breasts, Trimmed of all fat 6 breasts
Extra Firm Tofu, sliced about 1/2 inch thick
Lemon Basil and Caper Sauce (Recipe attached) 1.5 cup

Directions:
Sear the breasts in a hot oven safe skillet, 1 – 1.5 minutes on each side
Transfer to a 350 degree oven and complete the cooking process for approx. 6-8 minutes (10 minutes for each 1 inch of thickness)
For each serving, top with 3/4 cup of sauce

Lemon Basil and Caper Sauce – Yield 8 1/2 cups serves 34 with 1/4 cup (you can freeze the excess, makes for a quick meal)

Ingredients
3 T Garlic Minced
5 T Shallots Chopped
1 C White Wine
2 C Capers
5 C Chicken or Vegetable Stock thickened with cornstarch
1/2 C Fresh Lemon Juice
3/4 C Dijon Mustard
1/4 C Basil Chopped
Salt and pepper to taste

Directions:
Combine all ingredients in a pan and warm on low.
