This recipe is a favorite at Utah’s Red Mountain Spa. Cauliflower is substituted for starchy potatoes & it’s get the creaminess from fat free neufchatel cream cheese. Anything you’d serve mashed potatoes with, try these instead. Perfect way to warm up on a cold winters day.
1 medium sized head of cauliflower
1/2 to 3/4 cup of neufchatel cream cheese
1 egg white
garlic powder to taste
Remove florets from cauliflower head. Steam in a steamer basket (a metal basket that goes in a pot) or veggie steamer until al dente. The cauliflower should be firmly soft, not mushy.
Place egg white and cream cheese in a blender. Be sure to put the cream cheese into the blender directly from the fridge. Do not let it sit out and become room temperature. Blend at medium speed.
Add cauliflower to the egg and cream cheese mixture. Blend at medium speed until light and fluffy. Add salt, pepper and garlic powder to taste. I use about a teaspoon of garlic and add the salt and pepper when I serve it.
